Taco Lobo is a Mexican restaurant that is located in the historic downtown Bellingham area. Their menu features tacos, burritos, tortas, and tons of other items. Taco Lobo is a casual restaurant where you order at the counter and they bring your food out to you.
The other day, my mom and I stopped in here for a late lunch while we were in Bellingham. I love Mexican food, but since there aren’t many Mexican restaurants in Vancouver, I’m always on the lookout for places across the border.
A complementary basket of chips comes with all of their lunch menu items. They have a salsa bar that had five different types, varying in colour, texture and spice. All of the salsas I tried were fresh and flavourful.
My mom ordered the pollo verde torta ($6.50). A torta is the Mexican version of a sub sandwich that is served on a crunchy French roll. The inside was stuffed with chicken in a green sauce, avocado, lettuce, tomatoes, and a bit of sour cream.
They sandwich was messy and it got a bit soggy, but it was delicious. The chicken was moist and the avocado and sour cream made the sandwich indulgent and creamy.
For my meal I ordered the carnitas ($8.50) from the lunch menu. It came on a platter with rice, beans, some veggies, and three soft tortillas.
They tortillas were soft and warm and they make them all in house. They were perfect for scooping everything up and soaking up the delicious pork juices. Rice and beans can be a bit blah, but these were very good. The beans were smooth and almost creamy, and the rice was moist and fluffy.
Now onto the star of the meal, the carnitas. This was the best pork I’ve ever eaten. After being slow cooked for hours, they fry the pork, so it is melt in your mouth tender, but the outside gets slightly crisp. The meat had such a rich and intense flavour. I could have eaten a plate just full of this pork. If you visit Taco Lobo, you must try this dish.
I was impressed with Taco Lobo and it vastly exceeded my initial expectations. Everything we ate was delicious while still being very affordable and filling. If you cross the border to go shopping I would recommend trying Taco Lobo.
